Chachafruto corn pockets

In a mixing bowl place 2 cups of water. You can warm the water to make the dough softer.

Add a teaspoon of salt, 1 teaspoon of oil and then 1/2 cup corn flour and 1/2 cup Chachafruto Mr. Balu.

Add the corn flour and Chachafruto Mr. Balu slowly, mixing with your hands as you add it, Knead a while and let stand for two or three minutes. When you stop kneading consistency should be a little watered down.

Returns to knead until the dough has a firmer consistence no cracks. Like a modeling clay. If the dough is too dry add more water if it is too soft then add more flour.

When the dough is ready make little balls the size of the palm of your hand and flatten it like the picture. To avoid cracks use a small container with water to moisten hands as pocket forms.

Then place them on a grill pan that should be hot for 5 min then lower to medium heat until it’s a little bit crunchy. Serve hot and and make a little cut with a knife so it can gently opens to any stuffing you want. (chicken, meat, eggs)

Creamed Spinach

Dice the onion and crush the garlic.

Then, in a nonstick pan brown the onion and garlic with a teaspoon of olive oil. Once ready, add the water and bring to boil.

When it shows first signs of boiling, add the spinach and salt to taste.

Cook it for about 5 minutes.

Now, in a processor crush all ingredients with 2 tablespoons of Chachafruto Mr. Balu.

Then get it back to the nonstick pot, Stir well.

Serve hot and garnish to taste.
